Rye BreadIngredients 1 cup rye flour 1 T yeast 1 ¼ cups warm water at 110°F 1 ½ t molasses 2 T vital wheat gluten 1 T oil 1 T caraway seeds 1 ¾ cups bread flour or add 2 T cornstarch 1 ½ t salt Directions Sprinkle yeast over water and molasses Add remaining ingredients to mixing bowl Knead for 4 minutes with dough hook Place dough in oiled bowl Cover and wait until doubled Punch down dough and wait 15 minutes Preheat oven to 350° F Place dough in loaf pan Cover for 1 hour or until dough crowns over bowl Bake for 30 minutes Internal temperature should be 189-200° F
